The lazy… er… busy Vegan’s guide to quick dinners

As I write this (it’s 11pm Tuesday night, scheduling post for tomorrow) I am eating Nutolene out of the can with a butter knife as I got home hungry from work at 10pm and my cat got out for the 8th time in the last few days. Once I found her I realised I don’t really have any food in the house because tomorrow is pay day, and I wasted a good half  an hour on Facebook and looking at school photos of rappers to cheer myself up. I’m not sure how I got there because originally I had just clicked through from Facebook once I had discovered this song, which is amazing…

Anyway, even though tonight is a terrible example of what I have for dinner, to be fair I cooked a tofu, shiitake & vegetable stir fry and put it with brown rice to take for work dinner except I ate it for afternoon tea. I know that people sometimes think that it’s time-consuming to eat well but I am a prime example of how that statement is complete BS. Apart from my Mexican problem, which we discussed earlier, I pretty much cook dinner for myself every night. Here’s a few ideas for people who might be struggling, keeping in mind it’s the tail-end of winter here in Melbourne…

Tofu, mushroom & veg stir-fry on brown rice

Chop up some tofu and marinade – I use mushroom soy, mirin & sesame oil, then chop and cook vegetables or use frozen stir-fry mix, add fresh mushrooms – I use shiitake, add tofu & cook until vegetables are tender. I made a batch of brown rice at the start of the week and just heated it up as I needed it. Much quicker that way. Or try the microwave 90 sec sachets from the supermarket.

Spinach & facon in a tomato sauce on wholemeal & vegetable spirals

This was a bit leftovers – jar sauce with the addition of frozen chopped spinach, diced facon strips and I think some Cheezly mozzarella style as well. I use a combination of wholemeal and vegetable spirals for fibre & colour.

Shiitake & greens on udon

This can be a dry or soup dish with the addition of vegetable stock. I boiled dry udon, diced up vegetables and shiitake and cooked them lightly in sesame oil & mirin, then added the cooked udon. The red sprinkle is Nanami, Japanese mixed spice. Could also add tofu, tempeh, or any mock meat and even use frozen vegetable mix for this. I use vegetable stock when cooking the udon, then add the cooked vegetables & mushrooms to that.

Mac'n'veg'n'Cheezly

Possibly one of my favourite quick & easy comfort foods ever. Whilst cooking small pasta, make a white sauce using the traditional method but Nuttelex/Earth Balance instead of butter to melt; make a paste with the flour and add non-dairy milk to create a white sauce, season to taste. Then grate a heap of mozzarella-style Cheezly into it and add the cooked pasta an vegetables and heat through. Do not eat it straight out of the  saucepan (okay, do).

I made Cholent from Veganomicon and then just added a few extra vegies that were lying around and had it on top of macaroni. It was pretty baller. I’ll put the Cholent recipe up soon, I kinda forgot I made it.

Fried tempeh salad for two

My bestie G’s first foray into tempeh – she was not a fan, maybe when it’s marinated because I love the taste but I know it’s not for everyone. Bonus tempeh for me! Fried it, added it to spinach, cucumber, canned corn, red capsicum and kumatoes with a grainy roll. Dressed to taste. Quick & fresh! Another chapter in my “Forcing Friends To Eat…” series; Salad!

So I work two jobs, which means 6 days a week, plus I take 3 or more dance classes a week and try to fit in cardio, studying and a social life into the rest of those days. Just a little bit busy… Consequently, I often have dinners which consist of leftovers, or meals that are easy to put together. So long as I have a jar of pasta sauce, beans, rice/pasta and frozen vegetables I can eat a balanced meal. Making it a more interesting is where the problem lies. Noodle soups, stir-fries, pasta dishes, one-pot dishes and basic vegetable+protein+sauce combinations tend to get a lot of use. So does ye olde “pick up a burrito on the way home”, depending on my budget. I also eat dinner at work a couple of nights a week so leftovers and rice+whatever work well for dinner out of plastic containers.

These meals probably prove my ability to a) budget and b) eat balanced meals but don’t show c) that I’m actually quite a good cook! I want to save those photos for other posts but I’ll leave you with this quick dinner I made for when I had a friend over for dinner – we were planning to go and play pool afterward and I wanted to make lasagne so I would have leftovers but forgot I didn’t have my Pyrex dish after I moved house so it became this… free form lasagne, I guess. cooked the sheets in a wide shallow pan, roasted vegetables – capsicum, zucchini, eggplant, portobello & toasted pine nuts, heated a jar sauce, layered sheets, sauce, veg & topped with olive tapanade.

So just because you’re short on time, it doesn’t mean you have an excuse to eat crappy meals. I place fast food, microwave meals and most take-away in this category. Whilst I spent more time on my lunches, entertaining and weekend meals, I like to think that I put enough effort into refuelling my body all the other times as well. I’ll post some of my breakfasts and lunches later on in the month. Enjoy your day!

Hey Hombre! Soy adicta a la comida Mexicana…

When I was growing up, I struggled to see the appeal of Mexican food. To me it was just nachos and tacos which came from packet mixes and jars, with heaps of cheese, sour cream, over-cooked mince and were pretty much just the lazy teenager’s parent-free meal option. I did partake in the occasional nacho bowl alongside jugs of beer at Uni, but otherwise, Old El Paso left me cold. Mexican went down the bottom on the list of preferred cuisines. Slowly, over the last couple of years, things have changed…

The first seed that got planted was probably when I found the Vegan Quesadilla recipe in Skinny Bitch and decided that maybe Mexican food didn’t have to be the sludgy cheese & sour cream-fest that I thought it was. This became a semi-regular meal option for me because it was so easy. The combination of tortillas, kidney beans, avocado, salsa and vegan cheese was way too exciting, and given I generally had all the inside ingredients, I just had to get tortillas from my local grocer and bang, instant comfort food.

Then I discovered the Vegie-packed bowl at Salsa’s in Westfield Doncaster after a pole session with one of my besties. She was raving about Salsa’s and after I tried this menu item, I was sold. It had frijoles, onion & capsicum, broccoli & zucchini, salsa, salsa fresca, guacamole, coriander & lime rice and I just ordered it without cheese or ranch sauce. Amazing. Pretty much everything you look for in a Vegan meal – carbohydrates, protein, good fats, vegetables and enough food to actually fill you sufficiently.

Living in Richmond with a guy friend meant plenty of weekends scoping out pre- & post-drinking semi-healthy meals. Taco Bill lured me in with fishbowl margaritas and the Vegetarian Combinacion but after I stopped eating dairy completely, they had much less to offer. Ensalada Verde with a side of frijoles and corn chips with salsa is pretty good for a light meal, or build your own with sides of tortillas, salsa, frijoles & guacamole, unless they have the Vegetarian Fajita on the specials board. That sizzling plate is boss. We ended up going to Taco Bill and Mexicali Rose (a slightly further but better quality option) for work lunches and I started to come around.

Meanwhile, a new restaurant opened in Melbourne called Mamasita. No bookings, just rock up and hope to get a seat – but the wait is worth it! A few of us went to try their quesadilla and the well-priced meals and amazing food impressed us greatly, their traditional Mexican menu meant Old El Paso was left well behind in distant memories and replaced with Tostaditas, real Tacos with all sorts of fillings and amazing ‘Comida para la familia’, plus proper Mexican beers and heaps of Veganizable menu options. In fact, last time I went with my brother earlier this year, the waitress was sad that she hadn’t known ahead of time that I was Vegan to offer extra appetiser options. Bless!

In Adelaide I was already seeking out somewhere to get some Mexican flavours while I was over for a conference, and fell in love with Zambrero. Basically, I walked in and they were playing Dashboard Confessional and when I told the server that I’m Vegan he said “no problem!” and told me everything I could and couldn’t eat, wrapped me up a huge burrito and I sat quite happily enjoying a lunch beer and burrito with my happy face on. Then I realised I was hooked… I started searching for a “Fresh Mex” place near me and campaigned Salsa’s to open a store near my house in Richmond. It happened, after I moved to Camberwell. D’oh.

But I found Mad Mex, an awesome place to get a ‘naked burrito’ near work (I sit and enjoy a Jarrito soft drink and perve on hot tattooed skaters, it’s Windsor, come on), Salsa’s is still near the studio that I train in, and Taco Bill is near my house in case I really need a fix. But Mamasita is definitely a must-visit when anyone is here from out of town… or just because.

Now, I’m quite happy to admit that Mexican cuisine is my favourite, especially since my previous favourite, Japanese, is so heavy with seafood products and Buddhist Japanese cuisine is a lot harder to find… so that is part of the reason why I’m more interested in travelling to the US and Mexico now than before, when I was all about going to Japan and eating for two weeks and why I love reading all of your blogs about Taco Trucks (hola, Seabirds!), empanadas and cornbread. Plus, playing the computer game Grim Fandango has left me obsessed with Dia de los Muertos, which doesn’t help. I’ve even realised my salads get pretty Mexinspired too…

I was trying to get photos for this post but there are so many pictures of burritos and Mexi-salads and vegie bowls it’s getting silly. Yes, my name is Ceri and I’m a Mexi-holic.

Gosh, is that the time? You can’t take a weekend off anymore.

So I’m a bit late on my scheduled blog update because I didn’t write one. I was having too much fun over the weekend and in my spare time not having fun, was trying to catch up on the thousands of VeganMoFo blogs. Not even exaggerating. So my friend D came down from Canberra for the weekend and bought me an Ocsober leave pass, which basically meant I could drink on the weekend, not feel guilty, and still raise money for the Life Education program. It had an interesting effect. I actually didn’t really want to drink that much, found myself drinking a lot slower and on Sunday, even though I ended up having a couple of catch-up beers with a different friend, could really have left the rest of the weekend dry. I’m sorry, who am I and what have I done with HPG!? I love a social drink or few, usually… but I have really realised what an effect it has on my system.

Regardless, we had a great weekend. I wasn’t feeling that great in the morning on Saturday so instead of all my amazing planned exercise, I went shopping with my housemate, L, and our friend A, for our Adam Jay photo shoot costumes. I didn’t find anything I liked and I hate shopping so I got bored pretty quickly. They looked smoking hot though. In the evening, we headed out to Brunswick Street aiming to have dinner at The Vegie Bar, which wasn’t my idea for once! Too bad they had a 45 minute wait and we ended up at Naked for Satan instead. There the four of us enjoyed a multitude of pintxos including their Vegan options (Veg*n options clearly labelled), and flavoured vodkas. Mine was violet, it was odd. From there we tried to get into Mana Bar but the wait was long there as well, so off to the cocktail lounge, Polly, instead. They had heaps of amazingly-named cocktails including Chairman of the Board, Booty Call, At The Drive-In, Flower of Tokyo, and more. We all chose each others which I think ended up pretty well.

I’d like to pretend we didn’t end up at China Bar, but we did. A few Vegan pintxos aren’t really filling, especially after only having two sushi hand rolls for lunch.

Waking up not hungover was quite nice though. We had coffee and then headed out to Yum Cha at Tao Tao House. Even though I had a crummy experience last time with the “vegetarian” trolley, I was prepared this time and spoke to the maitre’d about my food preferences and the menu. Doing so meant I had enough dishes brought to me to lapse into a food coma along with everyone else, having inhaled steamed vegetable dumplings, spring rolls, fried tofu skin rolls, Chinese broccoli with garlic, salt & pepper tofu and finally coconut agar jelly. Sorry, no pics. Too busy eating. The maitre’d was hilarious and really helpful. I rate her!

So, I did indeed have a weekend off from everything. Even though I did have an awesome workout and heaps of fun at the Pink Poles Across Australia Girls Night In for the Cancer Council (phew), I didn’t do any of my planned weekend exercise, had a weekend of (modest) drinking with my Oscober leave pass and even though I didn’t eat badly, I didn’t exactly eat really well. In fact, I just remembered the bag of caramel popcorn my housemate and I ate on Saturday afternoon. Don’t be hatin’.

Back to it this week! I slammed my Advanced Pole assessment tonight and even though I think I could use another term to work on technique, I nailed a few difficult tricks & combos tonight that I felt I had no hope of getting 7 weeks ago. Now I have a week to practice my solo performance before that gets assessed. Scary. Tomorrow I need to get my run on, and make a tofu & vegetable stir-fry to take to work for dinner. I’m out of protein powder so that makes me sad but on Wednesday night when I get paid I’ll do another grocery shop and try to get some ingredients for another Veganomicon recipe.

The best of #VeganMoFo so far…

 

 

 

I’m about to head off for my Crazy B*tch Saturday (today it’s a 6km run/walk to studio, then classes) and then I have a close friend visiting for the weekend so I’m not sure what the rest of the weekend entails. In the meantime…

There have been so many posts to read every day, I have been struggling to keep up! Literally over 1000 posts a day to read, so I’m doing my best to keep up. I have to say, finally getting Internet at home helped, as did working an overnight shift!

Here are some of my favourite posts from VeganMoFo so far;

Elizabeth from Czech Vegan posted this recipe for Tofu Pumpkin Pie and you can be sure I will be making it for Halloween/Thanksgiving/Christmas and any other occasion I can find irrespective of whether we celebrate it in Australia. I love pumpkin pie and was not looking forward to another Christmas without it.

I love packed lunches, it’s actually kind of creepy how much I like them. I used to send one of my former boyfriends off to work with sandwiches, fruit, snacks & treats including fun size packs of lollies. Pretty sure he loved it. But Jenny from Vegan and So Forth posted her kids’ lunches and I got chronic lunch envy!! I’m definitely going to start putting more effort into my own lunches again.

When I was a teenager I was really into with Buffy and loved Spike. Alexs from Veganarium posted this awesome recipe for Onion Blossoms, which I have never heard of, nor do I fully remember the reference to them, so kudos to her! It’s a fun post for any Buffy fans out there though.

Just because I love a good pop culture reference, VeganVintageGal from The Vegan Underground decided on the theme of Food and Film for this VeganMoFo and her first post was from A Clockwork Orange, Milk-plus from the Korova Milk Bar, to “sharpen you up and make you ready for a bit of ultra-violence”

CynthiaMcG from Silkpurse knows I want my pudding and want it now, so here’s a dessert for those with a short attention span, using chia seeds, cacoa & coconut milk.

Veganomicon: Pineapple cashew quinoa stir-fry

In my Epic To Do List, number 14 is ‘Cook everything in Veganomicon‘. Well now I’m one recipe closer. I kept reading about other people making this, and given I am trying to find new recipes to make to take for work lunches & dinners apart from ye olde salad with beans or tofu & veg on brown rice, I thought this would make a good one. The other problem is that because I’ve been exercising more than usual, I’m quite a bit hungrier than usual so I need to eat more. Enter…

Pineapple Cashew Quinoa Stir-fry
From Veganomicon by Isa Chandra Moskowitz & Terry Hope Romero

Ingredients:
1 cup quinoa, well rinsed and drained
1 cup pineapple juice
1 cup cold water
1/4 teaspoon soy sauce

4 ounces cashews, raw and unsalted
3 tablespoons peanut oil
2 scallions (spring onion), sliced thinly
1 hot red chilli (birdseye chilli works well), sliced into very thin rounds
1/2 inch piece ginger, peeled and minced
1 red bell pepper (capsicum), seeded and diced
1 cup frozen green peas
1/2 cup fresh basil leaves (Thai basil!), rolled and sliced in thin shreds
2 tablespoons finely chopped fresh mint
10 ounces fresh pineapple, cut into bite sized chunks
3 tablespoons soy sauce
3 tablespoons vegetable stock
1 tablespoon mirin
Lime wedges for garnish

I used red quinoa because it’s what I had, and I pre-cooked it because I wasn’t sure how much time I would have during the week. So I poured the juice over and stored it in the fridge overnight. I used sesame oil instead of peanut oil and didn’t have basil, mint OR ginger. Yes I suck, but I only had $23.20 for groceries at they came to exactly that. Plus I used canned pineapple so I already had bite sized chucks and juice ready to go.

Method (how I did it anyway):
Dry roast the cashews in the pan for 4-5 minutes on low-medium, then take them out, turn it to medium and put the oil in with the garlic, chilli & spring onion. Then add the peas and capsicum and cook for a few minutes before adding the pineapple, then after a few more minutes add the quinoa and stir through, then stir in the cashews and sauces and cook until everything is combined and hot through.

So easy. Super tasty. Apparently it served 4 but that makes 2 meals for me. I didn’t even plate it nicely because it went straight into plastic containers. I will definitely make it again. I had it tabbed to make in Veganomicon but I also saw it on these blogs, which made it a much higher priority;

Victoria Market organics and lunch at Invita


I’ll admit it, whilst I’m not a tight-arse (the opposite, often to my detriment) I jump at the opportunity to have my groceries bought for me by my parents… and my lunch… and my kitten needed kibble and litter… okay, basically I’m super poor right now and take what I can get! So on Sunday around midday my Mum took me to the Queen Victoria Market and gave me some cash to buy myself some supplies. Love her! Since I live on the other side of town it’s kind of nice to head over and spend a few hours once or twice a fortnight catching up. Usually eating Vego food and walking somewhere…

I didn’t make it to the bakery section before they were all sold out, and there were a few other things that are cheaper at my local supermarket so I thought I’d leave them until I can get there. The general food produce section was really busy and just deciding what I wanted became overwhelming. In the end I bailed back to the Organics aisle and holed up a salesperson whilst holding an armful of vegetables. From memory I got asparagus, eggplant, pumpkin, a bag of mixed leaves, avocado, sweet potato, shiitake, tomatoes, yellow capsicum, zucchini, cucumber, pak choi, broccoli and a red onion, plus a can of black beans from another store.

Then I stumbled across these…
They’re Kale Chips! On sale 2 for $10 too! You might ask why I don’t have one of my own photos to supply… well… the Kale chips didn’t last very long and I only discovered them last week on Loving Earth so I was pretty excited about them. It’s hard enough just finding kale at all, so this was mind-blowing.

Lunch was pretty rad as well. I’d never been before, but Invita have a wide selection of wholesome foods, with dietary requirements catered for really well. Menu items catering to Vegan,Gluten Free, Wheat Free, Sugar Free and more are all labelled clearly on the menu and range from $3.50-$13.60, which is quite reasonable. My Mum and I shared a vegetable soup, a tofu burger, a corn cake and side salads and were really quite full afterwards. They did take a while to get the food out to us but they were quite busy, it being lunch time and all.

I’m definitely putting Invita on my “must visit” list for when I’m at Queen Vic Market next. I’m also going to get there a lot earlier later because the bagels sell out early. Plus it gets so busy that I don’t really want to deal with all the people trying to get in before the market closes. If I’d had more time I would have tried to find the stall that had Vegan feta. Oh yes.

I want more kale chips.

A Nice Guy stole my heart


It’s true. I’m in love with Mister Nice Guy.  Sorry Lucas and Deb, I don’t want to freak you out or anything but…

I’d heard about this Vegan Cupcake-making duo along the wires but it wasn’t until last summer when I was spending a lot of time in Brunswick that I actually managed to sample the awesomeness that is a Mister Nice Guy cupcake by way of brunch at Empire Strikes Back. I think the flavour I tried that day was Chai something, but even though I don’t remember the name (it may have been Ginger Snaps now I look at the cupcake menu), I do remember it was absolutely amazing and ended up all over my hands and face.

I had about a million (give or take) Mister Nice Guy mini cupcakes at my birthday party in July and lived off them for 4 days afterward (actually not exaggerating). From memory we had Rosie Robot (pistachio cake & rosewater frosting), Key Lime (coconut cupcake & lime frosting), French Toast (cinnamon & nutmeg cake with walnuts & maple frosting), Boo-berry Lemon (vanilla & blueberry with lemon frosting), Orange Creamsicle (orange cake & orange frosting) and Count Chocula (chocolate & chocolate). Yep, amazeballs. Their branding is awesome, the product is more than awesome and I can’t stress how much I just… think they’re great.

Recently Mister Nice Guy have opened a stall at Prahran Market, just around the corner from my work, but luckily aren’t open two of the three days I’m there so I think I’m safe. I went down on opening day to pick up some cupcakes before going to the football and even though I was so excited and shy to be served by Lucas himself and barely got my order out, I was very happy with my selection. Except for the Bloody Mary cupcake. That was weird. In the picture to the right, clockwise from bottom left are: Rosie Robot, Bloody Mary (Tomato cake with vodka infusion and pepper garnish… I think?), Peppermint Patty (Chocolate cake with peppermint frosting), Beetle Juice (Cookies & cream cake with cookies & cream frosting w/ a cookie), Count Chocula. Can you see why I have fallen so hard?

A little late to the raw party

In the spirit of VeganMoFo I will be posting a bit more about my Vegan food explorations as much as I can fit it in with being a poor student trying to shape up and cooking for one with a busy lifestyle etc.

I’m getting on the raw food bandwagon a bit late, I know. Whilst I have looked into raw food here and there over the years I’ve decided it’s not for me, in this part of my life anyway. But I do love my raw veg and I just wanted to briefly share with you a couple of interesting raw food experiences I had recently. The first one was not being able to decide which dessert I wanted to try and convincing a boy to share two raw vegan cakes with me. I think I need a gold star for this feat alone. The blueberry was was OMFGWTFBBQ… just divine. It was heaven in my mouth. The cacao was way too bitter and intense for me but I can totally appreciate it, just not for me. Enjoying dark chocolate as much as I do, I am always surprised when I don’t like raw cacao.

My Mum and I walked to my favourite place to eat ever, the Vegie Bar, when my Dad went away for the weekend and had an all-raw lunch. The meal above was the Living Stack with fresh & dehydrated vegetables, portabello mushroom & wakame seaweed on top. Pretty awesome.
I ordered the raw vegetable lasagne which came with beetroot pesto (I think) and raw cashew cream. It was really pretty and super tasty but didn’t really fill me up, so I also ordered…
Flax & chia tostada! You can have it rotated awkwardly so it is easier to read, k? These were awesome! Would be great for canapes at a party. Loved them. My Mum  had an apple, pear & mint juice and being a bit weird as she is, ordered it with spirulina which ended up making it look like green sludge. Ick. Tasted fine though. I had a raw cacao, agave & almond milk shake. I liked it but I wouldn’t drink a whole one again. Especially after realising that I didn’t like cacao and ordering it anyway? Whatever.

Not drinking is rad, and other weekend updates.

Happy Monday! I’m tired after a busy weekend and daylight savings kicking in messed with my sleep a little but that’s okay – we’re now that little bit closer to Summer! This is a VeganMoFo post for all the fitness loving Vegans out there.

Time for a couple of updates, the first one being Ocsober. On Friday night, the last night of September, I went to Red Bennies to see An Awful Lot of Vaudeville. I absolutely loved it! My friend cooked me dinner and we had a couple of glasses of wine over dinner. Whilst enjoying a fabulous vaudevillian cabaret/burlesque show, I thought it appropriate to order a Martini. I like dirty vodka Martinis but was accidentally given a classic vodka Martini with olive garnish. Disappointment; the flavours just don’t go together. Afterward I caught up with a couple of my besties and we had a few drinks. I would have preferred to wake up fresh on Saturday but I didn’t. Friday night definitely reinforced the effect that alcohol has on the body, mind, sleep & energy levels! Bikini Body Challenge
On Saturday, I did do my 3 hours of class, and I ate pretty well all weekend save for snacking on some potato chips at work on Saturday night. I had vegetable dumplings for dinner and on Sunday I had a big vegie feast for lunch and shiitake & greens on udon noodles for dinner. Today the next week of the Bikini Body Challenge continues!

Meal Plan
I’ll be eating at work two nights & eating late two nights, so I’ve pre-cooked some brown rice & quinoa to add to veggies and protein for quick meals. I’m not going to list the weekend because  haven’t made plans yet but I have a friend down from Canberra so we’ll be out somewhere most of it.

Breakfast
Monday – Toast with vegemite, coffee
Tuesday – Coffee, protein pancakes
Wednesday – Muesli with soy, coffee
Thursday – Coffee, protein pancakes
Friday – Muesli with soy, coffee

Lunch
Monday – Salad with black beans, kale chips, protein shake
Tuesday – Sushi/salad/vege-dog etc before a movie in town.
Wednesday – Salad with black beans, Tahini sandwich, protein shake
Thursday – Pumpkin, vegetable & soy cheese wholemeal pizza
Friday – Salad with beans, Tahini sandwich, protein shake

Dinner
Monday – Stir-fry with tofu & brown rice
Tuesday – Pineapple quinoa stir-fry, chick’n patty
Wednesday – Stir-fry with tofu & brown rice
Thursday – Pineapple quinoa stir-fry, chick’n patty
Friday – Vegetarian Burrito from Mad Mex

Snacks & Treats
Fresh fruit, dried fruit, nuts & seeds, rice crackers, coffees, juices, etc.

Exercise Plan
Monday – Advanced pole class
Tuesday – Run & stretch
Wednesday – Spinning pole class
Thursday – Run & stretch
Friday – Girls Night In workshop for the Cancer Council
Saturday – Run, Intermediate Hoop, Hoopsations, Polesations classes
Sunday – Rest Day (I think I’ll need it!)

This isn't me, but it's what we were learning

I’m definitely feeling stronger and fitter already, I haven’t seen a change in weight but I did rip the arm of one of my short-sleeved shirts after struggling to do the button up. Call me The Hulk. This week I’m just aiming to finish 5km without stopping, or at least make an improvement on last week. I definitely won’t forget my leg warmers for hoop after the ridiculous bruises I acquired on the weekend. Ouch.

HPG does #VeganMoFo 2011 & a bunch of other stuff

So I’ve kind of gone a little bit nuts this October, clearly. I’ve signed up for Ocsober, I’ve got my Bikini Body Challenge and my Epic To Do list and now VeganMoFo. Plus I’ve got two jobs and Uni still to juggle, how I am finding the time, I don’t know. But here goes nothing!

Vegan MoFo

What is VeganMoFo? Well… from the ladies of VeganMoFo themselves;

VeganMoFo was originally created on the Post Punk Kitchen, as an homage to NaNoWriMo. Because we do want to write novels, but sometimes cooking gets in the way. So why not combine them!

The idea is to write as much as you can all month, about vegan food. The blog entries can be about anything food related – your love of tongs, your top secret tofu pressing techniques, the first time your mom cooked vegan for you, vegan options in Timbuktu – you get the idea, right?

So I’ll be attempting to post a blog every weekday of October for VeganMoFo – that’s 20 posts! Granted, some of those will be multi-tagged posts, I don’t want you to get sick of me! It’s hard to pinpoint exactly what I’ll be posting about as I kind of fall into fitness/budget/cookie-foodie/single lady Vegan categories. So you’ll probably get a bit of a mix.


The exciting thing about VeganMoFo is that I will end up cooking a heap of recipes from Veganomicon which will contribute to my Epic To Do list. Hooray!

Ocsober

Ocsober is a fundraising initiative that encourages people to give up alcohol for the month of October. The money raised goes to Life Education, the organization behind the iconic educational mascot, Healthy Harold. Ocsober is also an important opportunity to highlight the growing danger of binge drinking and alcohol abuse, particularly among young Australians.

Ocsober raises funds for Healthy Harold and Life Education’s drug and health education programs that support and strengthen primary and secondary schools drug and health initiatives.

The money you raise will go directly to Life Education to teach more children the skills and the knowledge to say “no” to drugs and alcohol.

Bikini Body Challenge

Alright challengers, I had my rest day yesterday, much to my disappointment! I spent a good half an hour in Rebel Sport on Chapel Street and online before work looking at foam rollers, Garmin monitors, gym bags and running shorts so I feel like I still had fitness on the brain. Today I have several classes scheduled for my CB (crazy b*tch) Saturday;

10am – Intermediate 1 Aerial Hoop class
11am – Hoopsations casual class OR Pole Power class
12pm – Polesations casual  class
Plus I also signed up for two workshops but they won’t run so that’s an extra 4 hours I was going to spend in the studio that I will now have free.

Yep, I’m officially crazy. Going to the farmers market with my Mum tomorrow to score some fresh produce on the cheap and then I’ll put my weekly meal plan up too.  No booze, lots of exercise and an excuse to cook amazing meals… we’re onto a winner!
